
The best soup made only from vegetables without meat, slightly spicy and full of flavor.
Grate 1 large carrot or 2 smaller carrots.
Chop all the remaining vegetables as finely as possible and cut the remaining carrots into thin slices.
Place 2 tablespoons of oil into a pot and add the grated carrot.
Heat it until the carrot releases its orange color.
Add about 2-3 liters of water.
Add the finely chopped vegetables and cook for about 50 minutes.
During the last 10 minutes add the noodles and finely chopped parsley.
At the very end beat one egg and slowly stir it into the soup while mixing continuously.
Leave it on very low heat for another 1-2 minutes.
Reduce the amount of pepper if you do not want the soup to be too spicy.
