Fruit Cup Cake with Plums – for a Large Baking Tray

The quickest and easiest fruit cake that always turns out great. It tastes delicious no matter which fruit you use.

We usually make it with apples because they are available all year round, but this plum version is even better because the plums come from my own garden.

Ingredients

Preparation

  1. Mix 2 yogurts with 2 cups of flour, 2 cups of sugar, 1 cup of oil and baking powder.

  2. Pour the mixture into a greased baking tray. I used an almost extra large tray, although a slightly smaller one could also work.

  3. Once the batter is in the tray, immediately place the plums or other fruit on top and spread them evenly across the surface.

  4. Bake for about 30 minutes at 180-200Β°C depending on the oven.

  5. When the cake starts getting color and smells delicious, it is probably done. Before removing it from the oven, test it with a fork or knife to make sure the inside is baked.

  6. Once slightly cooled, sprinkle powdered sugar on top.

Tip

You can even mix this batter using just a spoon because it is fairly liquid.
