The Best and Quickest Wafer Cake

As a working woman and mother, I do not have time to cook desserts for several hours.

This is a quick recipe for delicious wafer cake and the only one you will ever need.

Normally I do not like using margarine, but for this recipe butter really is not necessary.

Ingredients

Preparation

  1. Place part of the milk, sugar and margarine into a pot.

  2. Leave the remaining milk aside and mix it with 4 tablespoons of flour until smooth and without lumps.

  3. Beat the egg in a separate bowl.

  4. While the milk is still cold, slowly add the egg and flour mixture into the pot while stirring gently.

  5. Add the chocolate and let it melt slowly.

  6. Stir everything constantly and cook on low heat so the filling does not burn.

  7. Cook for around 10-15 minutes until the mixture becomes completely smooth.

  8. Let the filling cool slightly and spread it evenly over the wafers.

  9. Cover the wafers with a cloth and place something heavy on top so the layers stick together properly.

Tip

Different wafer brands can behave very differently.

The wafers from the photo were from Plodine and worked perfectly. Later we bought another brand from Spar that was extremely fragile and collapsed once the filling was added.

So if the recipe does not turn out well, the problem may actually be the wafers.
